Asiago Bacon Potato Wedges

Baked Parmesan Zucchini Stacks

Roasted Okra
I haven't always loved okra. I would eat it once in a blue moon roasted in the oven, the way my Precious Mama and Grandma cooked it. However, for most of my life, I despised it. The sight of slimy green pods just didn't make my heart sing. Fast forward .. I now put it in stews, soups, peas and beans, loving the flavor and the way it thickens whatever it is cooked in. I also love Roasted Okra!

Hash Brown and Sweet Pepper Kugel
Oh...My! This Hash Brown and Sweet Pepper Kugel turned out so light yet full of flavor! We all loved it and a couple of us ate this, skipping the meat, with green beans to complete our meal. It is so easy to make, I do not know why I have never made this before! It is a keeper and will definitely be added to our menu.

Alfredo Cauliflower
Have you tried Alfredo Sauce on cauliflower? If you haven't, you really need to do so. It is wonderful! The sauce is easily made while the cauliflower cooks. Broken apart in pieces, or mashed, this could easily be a new comfort dish!

Chinese Slaw
I have never liked slaw. It's always had that blick taste to it. My sweet Mama would make it and I would do everything I could to get around eatin' it. It just wasn't good, anyway it was made.

With grilled chicken on the menu for today, I decided to give slaw another try. I found an old recipe for Chinese Slaw and made it yesterday. I liked it! It did turn out to be on the sweet side, perhaps that is why. I do not mind eating this slaw. ;) I put it in the back of the refrigerator to save for today. When I went to take it out, half of it was gone. I didn't see the point in adding the toasted noodles or almonds now, since hubby ate nearly all of it. I suppose he likes it, too! :)

Baked Potato Chip Crusted Onion Rings
Potato chips and onions rings meet bringing happiness all around. ~smile~ Try different flavored potato chips for unique onion rings! Vinegar and salt. Barbeque. Sour Cream and Onion. Cheddar. Chipolte. Ranch. The possibilities of flavored onion rings are endless! Which flavor will you try?

Baked Potato Chip Crusted Onion Rings
Ingredients
2 medium to large onions, sliced thin and separated into rings
1 cup milk
1 egg
10 to 15 oz. bag potato chips, try different flavors, crushed
1/2 to 1 cup cake flour
seasoning, if desired
Directions:
Preheat oven to 400 degrees F. Crush potato chips in processor or put in a bag and crush with hands. Put in a bowl, bag or on a plate. Carefully, slice onions into thin slices, separate into rings and put aside. A mandolin works great for uniform cuts. In another bowl, beat egg into milk. Put cake flour in a bowl, bag or on a plate. Make room on counter and line up: cake flour, milk and egg mixture, crushed potato chips, and greased cookie sheets. Dip onion rings in cake flour. Shake off excess and put in milk and egg mixture. Take rings out with fork, shake excess milk mixture off and put in potato chip crumbs a few at a time, pressing, or shaking bag, to coat. Onion rings may not be completely covered. Put on greased cookie sheets. Bake 10 to 15 minutes until crisp and golden. Plate and serve. Enjoy!

Oven Roasted Corn
Fourth of July, a fun day at the beach and splash park. Hubby had the grill filled to the brim with leg quarters...just because we Love them. ~smile~ I needed a new way to cook corn besides the every day, ho hum, boiling method. I do love it off the cob and fried..mmmmmm!!!! This is an easy peasy, roasted in the oven, with the husk on, way to cook corn on the cob! No prep work needed. Yeah, I'll all for that! It was so sweet and delicious, we didn't add a thing to it. No butter, salt, pepper, garlic, herbs ... nothing at all. Of course, you may want to enhance the corn by doing so.

Italian Pepperoni Pasta

Sweet Potato Puffs
Oh, do I have a favorite holiday sweet potato dish for you! Dessert or side, you decide. It's an old one but a great one! Cook as many sweet potatoes as you wish. Sweeten to your taste with either brown or regular sugar. Add vanilla, cinnamon, nutmeg, ginger, nuts....whatever you want to make it your own. There really isn't a set amount of anything. It's your old sweet potato casserole rolled up in a ball with the marshmallows hiding inside!!!

Lime Pineapple Jello Salad
My precious Mama would always make this congealed salad, especially holidays. We all loved it and now my family does, too. The only difference? I don't wait for special occasions to make and enjoy.
I noticed this looked a little thin and commented about it to hubby. He told it may be because he ate about half of it, still in the bowl, while I was getting the boys ready for bed! ~smile~

Broccoli Corn and Cheese Jiffy Mix Casserole

Potatoes and Ham Soup
This brings back memories of my precious Mama cooking newly dug potatoes from the garden. I would have to wash the dirt off and place them on dry grass to dry, turning them over to ensure even drying. There is nothing better than fresh potatoes that have simmered on the stove, either with a cream sauce..Potatoes and Cream Sauce, or with a hunk of leftover ham. Mama always put a lot of pepper in her potatoes and would sometimes but garden peas in with the cream sauce. I started out not making this to write down and just added a little here and more there. Adjust the recipe to suit. Do you have a potato memory? ~smile~
