Oven Roasted Corn
Fourth of July, a fun day at the beach and splash park. Hubby had the grill filled to the brim with leg quarters...just because we Love them. ~smile~ I needed a new way to cook corn besides the every day, ho hum, boiling method. I do love it off the cob and fried..mmmmmm!!!! This is an easy peasy, roasted in the oven, with the husk on, way to cook corn on the cob! No prep work needed. Yeah, I'll all for that! It was so sweet and delicious, we didn't add a thing to it. No butter, salt, pepper, garlic, herbs ... nothing at all. Of course, you may want to enhance the corn by doing so.

Onion Dip
I am always trying to find ways to make the food we love without the extra cost. Three hungry boys can put a damper on my pocket. A little help here and there is always welcome. This fits the bill. ;) Reminiscent of the onion dip my precious Mama made with Lipton's Dry Onion Soup Mix. You will love this! Hubby said it needs more onions, I say it is just right. ;) Add more onions, and/or dried minced onions, to suit your taste...or those devouring the dip. ~smile~

Strawberry Lemonade
Summertime: pool time, fun time, all the time! Lemonade is always a beverage we keep in the fridge during the summer. It just speaks of summer. I don't know why we don't make it in the winter when lemons are in season and plentiful. I'll have to start.
This recipe gets better the longer it sits in the fridge. Although, it doesn't last that long around here. One of my twins eats lemons .. just as they are...see his little fingers trying to fish a slice out. I have to sweeten them in some way. I may have to make this at night next time. Get your lemons and fruit ready..we are making lemonade! Enjoy!

Italian Pepperoni Pasta
One of my twins loves pasta! He could eat it all day , each and every day. Now that I think about it, I think he does have it at once a day. This is perfect for the summer as it doesn’t need to be refrigerated. I’ll be making this one a lot.

Chocolate Ice Cream Made In The Freezer
Who says you can't have ice cream without an ice cream maker! I'm pretty certain as long as I keep making ice cream this way, I'll never get the ice cream maker I want either! It's really easy to make the worst part is the wait. Make it in the morning if you want it for the evening or the night before even for a really hard set. The ice cream melted, once again, before I could take a picture. It was hard set when it started. ~smile~ Who wants ice cream? <3 and hugs!


2 squares unsweetened chocolate, 1 oz each, chopped into small pieces
2 cups heavy whipping cream, divided
pinch salt
1 can condensed milk, chilled
Heat 1 cup cream until it gets hot but does not boil.
Take off heat and add chopped unsweetened chocolate, stirring until melted.
Chill until completely cool.
Put condensed milk in large bowl.
Beat remaining 1 cup of cream with chilled cream and chocolate until firm peaks form.
Do not over beat.
Fold into condensed milk and put in a loaf pan or shallow pan for faster freezing.
Freeze at least 6 hours. My freezer was opened at least one hundred times while trying to make this set. It was soft serve at 4 hours. Try at least 6 hours for a firm set. Enjoy! <3 and hugs!
