Multi Grain and Quinoa Whole Wheat Cake

Homemade Cake Release

I am forever having my cakes stick to my bundt pan.  Always!  It never fails.  Whenever I want to bake a bundt cake I am both filled with excitement and dread.  Now, there are no worries!  I remembered my step daughter, Carla,  told me about making your own cake release and I have finally made it!  This recipe has been around forever, I don't know why I haven't been using it before now.  It was such a relief to see my little bundt cakes come out of the pan without sticking.  Love this!  Just brush the cake release in your pan and wait for your perfect cake to come out of the oven.  Use them with my Sour Cream Pound Cake, Lemon Fizz Cake, Cooked Apple Coffee Cake, Carrot Cake .. everything you bake!  Use what you want and leave the rest in the refrigerator.  Now, get out your bundt pan and bake away!

Meyer Lemon Pudding Cake

If you love melt in your mouth, light as a cloud, creamy, lemony/orange deliciousness of Meyer Lemons, this is for you! Oh. My. Goodness! I was very pleased the way this turned out.  This pudding cake could be a light, airy custard, a fallen soufflé, or baked mousse!   Yes, it is that good!  I added Homemade Lemon Curd and my mouth experienced an explosion of a lemon cloud!  Topped simply with powdered sugar was pretty amazing, too! Feel free to substitute whatever lemons you have for the Meyer Lemons.  Oh,  this is a thin "cake" ... you will want to double this if you are serving it for company!

Dark Chocolate Cake

As always in our house, nobody can agree on what kind dessert, or anything for that matter, they want.  I did as I usually do and combine different ingredients of their requested food.  It tends to make a happy dessert for everyone.  I saw a recipe on the back of Hershey's Dark Cocoa..here is their recipe for Deep Dark Cake.  I adapted this recipe from theirs.  This cake is very moist and really does not need anything to top it.   The icing is great though.  We added it to cut pieces, each person topping their own.  I did find that this cake wasn't as thick as I wanted it so I made another cake that is reduced fat.  It turned out a little thicker.  I'll be sharing that one very soon.   I am making another one tonight cake tonight in an 8x8" pan and will let you know how it turns out.  <3 and hugs!

My Birthday Cake

Today I am 49 years old.  Not too young but not too old either.  Just a Happy Medium for me!  I had a Beautiful Day.  I received Soooo Many Beautiful Birthday wishes from Lovely Friends and Family!  My boys let me sleep just a tad longer than normal.  Made their own breakfast of...this is not normal by any means, Oreos and milk.  I know...I know....

Then they went to Walmart, our favorite store where everyone knows us by name!  Yep, that bad.  Go there that often that they are like neighbors and I have a friend from there on my facebook.  ;D They each bought a little toy to celebrate.  <3

My oldest told me this morning...Mom, I know you love to bake and I know you are going to make a cake today.  ;D  So that is what I did...Made us a birthday cake.

Please note....I used a sparkler for this shot.  We did not eat this piece of cake.  

I have seen sparkler candles at Walmart and Party City. <3 and HUgs!

I used my Triple Chocolate Cake and added 1 cup each of chopped walnuts and caramel bits to the batter.  I baked this in a springform pan.


I melted the remainder of the caramel bits and a teaspoon or so of water,  then added a handful of chopped walnuts to it.  You can top the cake, but we really don't like icing and toppings on our cakes...Okay, It's me that doesn't.  So I make something for All the boys, little ones and hubby and add to theirs.  Hope you like My Birthday Cake! <3 and Hugs!
