Lime Pineapple Jello Salad
My precious Mama would always make this congealed salad, especially holidays. We all loved it and now my family does, too. The only difference? I don't wait for special occasions to make and enjoy.
I noticed this looked a little thin and commented about it to hubby. He told it may be because he ate about half of it, still in the bowl, while I was getting the boys ready for bed! ~smile~

Pineapple Blueberry Popsicles
We love popsicles! It doesn't matter if it is summer or winter, if they are here, we shall eat them! I just found this one in the back of the freezer and I am so happy I did. One of the twins and I had a yummy suprise treat. Enjoy these frozen treats of summer anytime of the year. They will make you smile...I promise. Love and hugs!
1 small can pineapple in juice, slices cut in pieces or chunks sliced in half
1/2 cup fresh blueberries, as much or little as you want to put in molds
pineapple juice or water, enough to top off the popsicle molds
popsicle molds or
small paper cups and popsicle sticks
Put fruit, as much as you want, into popsicle molds or small paper cups.
Pour juice to within a 1/2 inch of the top of cup or to line on molds
With plastic knife, gently move stir fruit.
Freeze 4 hours or until hard set.
Enjoy!

Pineapple Upside Down Cup Cake
A couple of days ago I saw an article in our newspaper about cooking in a cup. Did you happen to see that? I was intrigued by this as my family is getting to be so very Picky lately!! This will be perfect for me. I can cook what is wanted. Really wanted. It's just that easy! No waste when everyone wants something different. Here is one of the "cup cakes" I have made. Pineapple Bacon Jam
Yep, you read it right! Pineapple Bacon Jam with fresh pineapple and caramelized onions...........YUMMO!!!! My oldest is taking FCAT tests this week and I wanted to make him some of his favorite foods during the week to reward him for doing an amazing job as well as comfort him. Y'all know how food is a comforter, soother and just an all around warmth, when things are a little It's his first "big" tests and he is very nervous about taking them. This is one he doesn't get very often at all but really loves.

Homemade Corn Chips
Today is National Corn Chip Day! My son is always intrigued with all the food holidays there are. ~smile~ Super easy to do and better for you than store bought.
Homemade Corn Chips
Corn Tortillas, very thin
kosher salt
olive oil cooking spray
Preheat oven to 350 degrees
Spray cookie sheet
Cut tortillas in to 6 wedges
Place on cookies sheet and spray with olive oil cooking spray.
Bake in a preheated oven for 3 minutes, check bottoms and turn over if starting to brown. Cook an additional 3-6 minutes, depending on your oven.
Sprinkle with salt once they come out of the oven.
I served ours with salsa that I added pineapple to. YUM!
To 1 cup store bought salsa, add 1/4 to 1/2 diced or chopped, pineapple. Try adding black beans, rinsed well and whole kernel corn also.
