Asiago Bacon Potato Wedges

Cold Crab Dip
My hubby's new favorite dip! It's a cold dip...which means no heating up the kitchen. A huge plus in these, already steamy, hot days. This delicious dip would be great with shrimp or lobster if you prefer. Imitation seafood would also be great.

Black Bean Salsa
Who doesn't love snacking? I know we do and we do it often! There is just something about eating with hands. Hand reaches to chip, to salsa and dip, to veggies (a least one son's hand does) to hungry mouths that await anxiously. Snack, snack, smack! Yes, that was my boys! They tend to get a little overzealous with chips and snacks and anything they can make a loud, mouthy sound with. I love my boys..but let's keep it quiet, okay? This lip smacking Black Bean Salsa was just another noise in the bowl app, awaiting my hungry boys. I adapted the recipe from a can of Bush's Best Black Beans!

Tomato and Cheese Bubble Bread

Spinach Squares
I love spinach but it wasn't until recently that I decided I did. I despised it as a child and would refuse to eat it, turning up my nose and closing my lips tightly. Now, I eat it weekly baked or raw, I want it! One of my twins eats it raw..he loves salads! The other two boys, well I'm working on them. Trying new ways. They'll come around..in time.

Stuffing Bites
What do you do with all the leftover dressing/stuffing you have from the feast you cooked yesterday? Make stuffing bites, of course! You don't even had to wait for leftovers..just mix a box or bag of stuffing according to directions, add whatever you want to it, form into a shape, pan fry or bake. There you go..simple and perfect! Great for watching the game, as appetizers for your guest, or just popping in your mouth while wrapping presents! Enjoy!
Form leftover dressing/stuffing into shapes. Spray skillet with non stick spray. Brown bites on all sides. Serve with Strawberry Cranberry Sauce or cranberry sauce. Enjoy!

Red Neck Appetizers..Grilled Cheese Balls
I was looking for appetizers to make for New Year's Eve. My oldest wanted grilled cheese....well Here Ya Go! Fun and Good!
Grilled Cheese Balls
Bread
Butter
Sliced Cheese
Spray pan with grease in a spray can.
Slather a bread with butter.
Throw it in a pan.
Top with 2 slices of cheese.
Top the cheese with bread.
Check to see if the bottom has browned, if it has...smash the top piece of bread.
Smear some butter on it and flip.
Cook until the bottom piece of bread is brown.
Take out and put on a piece of paper towel.
Cut into 4 squares, Trim the ends...you know your kids don't like it.
Take a square and roll into a ball.
Stick a tooth pick or cake pop stick in it. Enjoy...Y'all!

Sausage Cheese Balls
If you have ever been in the south during the winter holidays, I know you have eaten these! We always called them just "Sausage Balls" but there is a lot of cheese in them so...Sausage Cheese Balls they are! I can remember these from way back when. Seems there were always on the table of snacks when there were get togethers at Thanksgiving, Christmas and New Years. I don't know why they were never fixed in the warmer months of the year. Something I will have to find out! Easy to make, Yummy to Eat! ~smiles~
Sausage Cheese Balls
I made 49 from this recipe. Mine aren't always the same size for some reason.
3 cups biscuit mix
1 lb bulk sausage
1-2 lb cheddar cheese 3-4 cups shredded..I used cut up chunks I had and got 3 cups
Preheat oven to 350 degrees
Spray cookie sheets (2)
Toss everything with a fork,
Mix with hands.
Shape into walnut size balls. Bake on greased cookie sheets (2) for 15-20 minutes @ 350 degrees.
Halfway through, lift sausage balls up with spatula so they won't stick and turn pan around. As always, My oven cooks different than yours. Please adjust time accordingly.
Place a paper towels to absorb grease from the bottom. Remove from paper towels, place on serving plate and serve with spicy or honey mustard.

Pumpkin Apple Bites
I made these thinking there would finally have a pumpkin pie I would eat. I like pumpkin but have never liked pumpkin pie. These turned out great. A little pumpkin and apple with cinnamon and brown sugar in a hand held crust. Very easy to make. My hubby was eating them as fast as they came out of the oven. We just love little bites of everything, don't you?
Pumpkin Apple Bites
makes 16-24 (we kept eating the filling so not certain) ;D
1 -2 cups diced apples
1 - 2 cups diced fresh pumpkin
1/2 cup brown sugar
1-2 teaspoons ground cinnamon
pinch of salt
flour tortillas, I used 6” and got three 2 1/2 - 3” circles You can use a small mouth jar ring
Directions
Preheat oven to 350 degrees
Cut your tortillas into circles
Cut your tortillas into circles
Peel pumpkin with a vegetable peeler, dice
Dice apples.
Toss both with brown sugar and cinnamon.
Heat tortillas in microwave, a few at a time, for 5 – 10 seconds.
Fit into mini muffin tins.
Add pumpkin and apple mixture.
Cook in a preheated oven for 5-12 minutes. Until set and tortilla cups are starting to brown.
