I am still in the mood for Authentic Asiago Cheese! When are we not, right? Since I still have a bit of Asiago Cheese leftover from the samples I received, I decided to bake potato wedges for my boys and oh...my...goodness! They were a hit! You simply cannot go wrong with potatoes, Asiago cheese and bacon, right?

Potato Gnocchi
I have never made gnocchi before. Ever so often, I will get a whim to make something new. Actually, it happens quite often. I'll get a light bulb moment and I just have to make that special something. This, was one of those moments. Certainly, they can 't be that hard, can they? The making part of the recipe was not that difficult. When it came to the pattern, you know, the little lines, it was a bit hard. I used a fork to go around the little pieces and that did not work well for me. I then made little balls and indented with a wooden spoon handle. Those shapes were easy enough to make. The end result was the same ... light potato and cheese pillows topped with a simple tomato sauce. Perfect!

Scalloped Mashed Potatoes
I was wondering...why we cook potatoes to mash, pour off the potato water (Mama always saved it for Daddy to drink), then add milk to the potatoes........

Potato Crusted Broccoli Cheese Quiche
We love to eat quiche. Well, hubby and I love to eat quiche. The potato crust really makes this a great one for us. We had this last night and again this morning for brunch. Add leftover meat, use other veggies, your favorite cheeses..to make this your own.

Potatoes and Ham Soup
This brings back memories of my precious Mama cooking newly dug potatoes from the garden. I would have to wash the dirt off and place them on dry grass to dry, turning them over to ensure even drying. There is nothing better than fresh potatoes that have simmered on the stove, either with a cream sauce..Potatoes and Cream Sauce, or with a hunk of leftover ham. Mama always put a lot of pepper in her potatoes and would sometimes but garden peas in with the cream sauce. I started out not making this to write down and just added a little here and more there. Adjust the recipe to suit. Do you have a potato memory? ~smile~

Fried Potatoes, Green Peppers and Onions
It's National Potato Day Y'all!
We love potatoes! Actually my boys like more of the french fry version but hubby and I love just about any way you can fix them. This is a favorite. I can see my sweet Mama cooking this many, many years ago. ~smile~
What's your favorite potato dish? I continue to fix them different ways with hopes of them finally liking them as we do.
I just love the smell of onions and green peppers cooking away! Throw in some potatoes slices and I can make a meal of this dish. My precious Mama would brown hamburger meat first then add the potatoes, onions and peppers. Sometimes I add mushrooms, also.
Grounded beef or turkey can also be added.
Served with a hunk of bread and this is comfort food to me.
4 to 6 medium potatoes, however many you need
1 small to medium onion
1 small green pepper
sea salt, to taste
freshly ground pepper, to taste
coarse ground garlic with parsley, to taste
Cut potatoes into slices, place in bowl and covered with water with a teaspoon of salt. Refrigerate. Keeps them fresh and they don't turn.
Spray skillet and heat to medium/medium high. Add potatoes and sprinkle with salt, pepper and garlic. Add onions and peppers...season again.
Cook until a little brown on the bottom and flip. Cook until all vegetables are tender and brown.
