Dark Chocolate Chip Strawberry Shortcakes

I'm still trying to revamp recipes to make them a little healthier than my norm.  Healthier this time was adding flax seed and cutting down on the sugar.   One of my twins was more than happy to help this morning when I told him we were making this for breakfast.  He sliced the strawberries, added the vanilla and little bit of sugar.

Dark Chocolate Zucchini Banana Cake

My precious oldest son made 6 A's and 2 B's on his final report card for third grade!!!!  I wanted to make his something special that was a healthier than my usual way of cooking.  I asked and my gorgeous friend, Ann of Sumptuous Spoonfuls, shared her recipe for Decadent Double Chocolate Zucchini Bread I loved the recipe the moment I saw it.   I love ALL of Ann's recipes for that matter!  
A quick trip to the store for zucchini, braving Tropical Storm Debby's rain bands and a stop by the Dr.,  I was bitten and scratched by one of our kitties this morning, I was all set to cook.  The bread...my boys call it cake, it's that good, has the rich taste a dark chocolate, a hint of banana, not too sweet (you can adjust sugar to your taste), and very moist!  A hit!  A little dense and oh so good! 
Well, what are you waiting for?  Go pick, or pick up, some zucchini!  <3 and hugs! 



Dark Chocolate Zucchini Banana Cake

2  squares unsweetened chocolate, 1 oz each, melted
1/4 cup unsweetened cocoa
1 1/4 to 1 1/2 cup granulated sugar
3 eggs
1/2 cup nonfat yogurt
1 ripe banana mashed, approximately 1/2 cup
2 1/2 to 3 cups grated zucchini,  I used one medium
1 teaspoon vanilla extract
1 cup unbleached whole wheat flour
3/4 cup all purpose flour
1/4 cup milled flax seed
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon, optional
cinnamon sugar to sprinkle on top

Preheat oven to 350F.  Oil or spray 9" spring form or cake pan.  
Melt chocolate according to directions. Cool.
Add cocoa, sugar, eggs and yogurt.  Mix well.
Sift together all dry ingredients.  
Add to wet ingredients and mix to incorporate. 
Pour in pan and bake in preheated oven for 30 minutes.
Turn and cook another 10-25 minutes.  Yeah, I know it's a wide range in time.  
I kind of lost track.   As always, my oven cooks different than yours.  Please adjust time accordingly.
It's done when toothpick, skewer or thin knife comes out clean.
Cool on rack and wait as long as you can.  Okay, go ahead and cut it now.  You deserve it!
Sprinkle with cinnamon sugar and enjoy!

Breakfast Slider

We love to eat breakfast for supper.  Do you?  There is just something so comforting to it.  I always think of my Precious Mama when we do.  Frying up bacon and then scattering flour on the bottom of the cast iron frying pan to cook the eggs just right!  MMM...treasured food and memory.  I'm not cooking bacon now but thought I would share since it's breakfast and all.  <3

I made this sandwich for my hubby the other night and he really like it, I did too!  The boys like their egg scrambled while we like our a little runny.  Eggs, sausage, hash browns, onions, pepper jack cheese, garlic and thyme.  Are you ready to eat?  Well, here you go then !  Enjoy!  <3 and hugs!

Breakfast Slider

1 lb bulk sausage, sliced or sausage patties, country, maple, hot, sage or season your own
or ground sirloin
eggs
pepper jack cheese, shredded
hash browns, I used frozen diced ones
1/4 minced onions
1-2 cloves minced garlic
dried thyme
sea salt, to taste
freshly ground pepper, to taste
 dinner rolls or slices of bread cut in rounds

Make sausage, or sirloin, into patties and cook until done.  Temperature should be 160 degrees for pork.  Cook sirloin the way you like it.
Put on paper towels to soak up the grease.  Blot tops.
Save a little grease, if desired, and add oil to cook hash browns according to directions.
Add hash browns, onions and garlic.  Season with sea salt and freshly ground pepper to taste.
Grate cheese.
When the hash browns are almost done on the flip side, toast rolls or bread rounds that have been cut with a cookie cutter or coffee mug.
To microwave eggs:  Crack an egg in a coffee cup/mug.
Sprinkle with thyme.
Cook at medium heat (1100 watt microwave) for 30 seconds or until the white is cooked on top.  Carefully flip it over and cook another 5 to 10 seconds or until your cooked the way you like your egg.  WATCH CAREFULLY!
If using diced potatoes, mash potatoes and onions until stuck together like the shredded ones.
Place on toasted rolls or toast rounds.
Top with shredded pepper jack cheese.
Place sausage, or sirloin, patty on top of cheese.
Top with egg.  Season with sea salt and freshly ground pepper.
Add additional cheese, if desired.

Peach Clafoutis

The combination of creamy custard and baked fruit is wonderful together!  Served warm with powdered sugar......Oh My Gosh,  you are going to love it!  I made this for my hubby on Father's Day, it was the perfect ending to an amazing day!

Peach Clafoutis 

4-6 ripe peaches, peeled and sliced
(enough to cover bottom of 10" cast iron skillet or cake pan)
5 eggs, beaten
1 1/2 cups milk, I used 2%
 1/2 cup granulated sugar
1/2 cup all-purpose flour, sifted
pinch sea salt
2 teaspoons vanilla extract
Nutmeg, or cinnamon stick, to grate over the top
Powdered sugar, as needed for serving

Preheat oven to 350F.  Butter a 10" cast iron skillet or cake pan generously. 
Put sliced peaches in skillet or pan.
Mix beaten eggs, milk, sugar, flour, sea salt and vanilla extract until smooth. 
Pour into skillet or pan.  Peaches will come to the top.
Grate nutmeg or cinnamon over the top.
Bake in a preheated 350F oven for 40-55 minutes.  

Until lightly browned and firm to touch.

Serve at room temperature sprinkled with powdered sugar.  Enjoy! <3 and hugs!

Picture Tiles

I always take a LOT of pictures.  And, I do mean a LOT!  There is a camera with me 99% of the time.  When I go out the door I grab my camera before I do my phone, which is does nothing except help me locate my hubby while we shop, btw.  At any given time there is a camera, if not two, in my purse, pocket or hand.  ~smile~  It is only natural, then, for me to give gifts of pictures for all occasions.  Whether it is DVD's for the teachers at the end of school or my last project..picture tiles.  They can be placed on an easel on your desk, used as coasters and I'm certain I can find a way to hang them on the wall.  I made these for an end of the year present for my twins pre-k teachers.   I'm going to make them again for hubby as a gift for Father's Day along with a picture of our oldest son.  You can have your child draw or write something to put on the tiles instead of, or in addition to, the pictures.  These are so very easy to do and can be made in no time at all.  Run to Lowes to pick up some tiles and hurry back to make these adorable gifts in time for Sunday.  Have fun!  <3 and hugs!


Picture Tiles

tiles..any size you want
mod podge
foam paint brush
spray can of clear acrylic sealant that is moisture proof if using for coasters
newspapers, optional

Pick out your precious pictures and trim to fit your tiles.
Apply a layer of mod podge on the back of the picture.
Place picture on tile leaving a border, if desired
Once dry, apply a coat of modge podge.  
Let dry, takes 5-10 minutes, apply another coat.
Repeat 5 - 6 times.
Once dry, take outside and place on something you do not mind getting the sealant on.
Make certain the area is well ventilated. 
You may want to put newspapers down.
Spray according to directions on can.
Let dry and spray again.  
Repeat 5-6 times. 
There you go!  You have made an amazing gift for someone special!
