I have spent the entire day trying to turn on auto renew for Google Apps to no avail.  If you can help, please let me know.  My time runs out this weekend and my blog will be shut down if I don't get it turned on and able to pay.  I can access everything else.

Cheesecake Ice Cream

I really enjoy making different ice cream recipes for my boys.  Some I write down, others do not.  Getting lost in the memory of an aging, busy Mama.  And, although I try to replicate them, they are not always the same.  This recipe is definitely one that deserved to be written down.  You can use this as a base to build upon.  Add your favorite topping swirled inside.  Flavor it chocolate, raspberry or peanut butter...there is no end to the awesomeness that can be make with this recipe.  The ice cream seemed to melt slower than regular ice cream.  When allowed to get hard in the freezer, I was able to make curls and form this cup to nestle Blueberry Compote inside.

Cornmeal Crescent Rolls

Cornmeal and crescent rolls!  Uh-huh.   These turned out just as I thought they would.  A soft crescent like roll with the Southern touch of cornmeal.  Yessiree, I think you are going to like these!

Chinese Slaw

I have never liked slaw.  It's always had that blick taste to it.  My sweet Mama would make it and I would do everything I could to get around eatin' it.  It just wasn't good, anyway it was made.  

With grilled chicken on the menu for today, I decided to give slaw another try.  I found an old recipe for Chinese Slaw and made it yesterday.   I liked it!  It did turn out to be on the sweet side,  perhaps that is why. I do not mind eating this slaw.  ;)   I put it in the back of the refrigerator to save for today.  When I went to take it out, half of it was gone.   I didn't see the point in adding the toasted noodles or almonds now, since hubby ate nearly all of it.  I suppose he likes it, too!   :)

Butterscotch Dark Chocolate Chip Cookies

I started out with good intentions of making biscuits and somehow, along the way, I made Butterscotch Cookies!  They were great as they were but I know my boys and they are not fond of butterscotch.  However, I can put dark chocolate chips in anything and they will gobble it up.  I think I’ll try them in cornbread just to see if my theory is true .  I'll let you know.  ;)   Eat these as they are or add oats, nuts, dried fruit, cinnamon sugar and/or dark chocolate.  Just make them and get raves about making the best cookies ever!  One of my twins told me,  "Hey Mom, they didn't even need milk!"  My oldest said to me, “When I have children, I’ll bring them over at Christmas to eat the best Grandma cookies!”  ~heart warm and subtle smiles~  That’s why I write Recipes For My Boys, so they will have their favorites … forever.

Baked Potato Chip Crusted Onion Rings

Potato chips and onions rings meet bringing happiness all around. ~smile~  Try different flavored potato chips for unique onion rings!  Vinegar and salt.  Barbeque.  Sour Cream and Onion. Cheddar.  Chipolte.  Ranch.  The possibilities of flavored onion rings are endless!  Which flavor will you try?




Baked Potato Chip Crusted Onion Rings
Ingredients

2 medium to large onions, sliced thin and separated into rings
1 cup milk
1 egg
10 to 15 oz. bag potato chips, try different flavors, crushed
1/2 to 1 cup cake flour
seasoning, if desired

Directions:
Preheat oven to 400 degrees F.  Crush potato chips in processor or put in a bag and crush with hands.  Put in a bowl, bag or on a plate.  Carefully, slice onions into thin slices, separate into rings and put aside.  A mandolin works great for uniform cuts.   In another bowl, beat egg into milk.  Put cake flour in a bowl, bag or on a plate.  Make room on counter and line up: cake flour, milk and egg mixture, crushed potato chips, and greased cookie sheets.  Dip onion rings in cake flour.  Shake off excess and put in milk and egg mixture. Take rings out with fork, shake excess milk mixture off and put in potato chip crumbs a few at a time, pressing, or shaking bag, to coat. Onion rings may not be completely covered.  Put on greased cookie sheets.  Bake 10 to 15 minutes until crisp and golden.  Plate and serve.  Enjoy!

Nutella Oatmeal Fudgesicles

It's okay to have fudgesicles for breakfast.  As long as they are made with oatmeal and Nutella, I will gladly approve.  I don't mind giving these to my boys early in the day at all.  They are always asking me for ice cream or popsicles around 10:00 in the morning.  I thought I would make this to satisfy their cold cravings.  It worked!  The three of them loved them!  Until.....my oldest squealed about the oatmeal.  One of my twins then made a face and declared he wouldn't eat them.  LOL  No fudgesicles for his breakfast!  At least, not today.   I will be making his breakfast popsiciles with vanilla and/or fruit.  Mmm, I can almost taste them.

No Bake Fresh Blueberry Pie

Yes, you read it right!  An amazing pie .. hey, that's what hubby said, without baking.  You will need to turn the oven on if you are going use a pie crust that isn't graham cracker.  But, that is totally doable when you have a pie as the result, right?  Get your blueberries ready to nest in a crust for a simple, and rather pretty, dessert.

Pineapple Sherbert

Do you love frozen desserts as much as we do?  We could eat them every day, regardless the temperature.  A couple like chocolate, another vanilla and most of us love frozen fruit!  This sherbert is just what we have been wanting.  Frozen, fruity and smooth.  YUM!  Adapt this to suit your taste.  Enjoy!

Lime Pound Cake Loaf

I made this recipe, which is supposed to bread,  but is more like pound cake, and topped it with a refreshing drizzle of lime glaze.  I took it to the pool and in no time at all, it was gone!  So refreshing on a hot day.  Enjoy!

Wow! The summer is flying by before my eyes. Beach, park, movies, splash park and everyday, water permitting, pool play. There are a few day trips I want to get in before school starts, but honestly, it is sooooo hot! I think the boys would just be miserable, walking around all day. How is your summer?

Oven Roasted Corn

Fourth of July, a fun day at the beach and splash park.  Hubby had the grill filled to the brim with leg quarters...just because we Love them.  ~smile~  I needed a new way to cook corn besides the every day, ho hum, boiling method.  I do love it off the cob and fried..mmmmmm!!!!  This is an easy peasy, roasted in the oven, with the husk on,  way to cook corn on the cob!  No prep work needed.   Yeah, I'll all for that!  It was so sweet and delicious, we didn't add a thing to it.  No butter, salt, pepper, garlic, herbs ... nothing at all.  Of course, you may want to enhance the corn by doing so.

Thursday's Treasures Week 93

Happy 4th of July!  Do you have exciting plans to celebrate?  Grilling, visiting family and friends?  Going to the beach, lake, backyard pool or resting your tootsies in a wading pool....which I have done pretty darn often.  No matter the place or activity, it's FUN!  It's always fun.  Just the thought of doing nothing, well other than cooking which I love to do..except when I can have my feet in the sand or tootsies in a pool.  Just doing nothing except having a wonderful day....making new memories, perhaps, reliving some of the old.  Eating, playing and socializing in a backyard, park or beach.  Wherever you go, whatever you do...have a lovely and  memorable 4th of July.

Strawberry Angel Cake w/Blueberry Compote

Happy 4th of July!  Do you have amazing plans?  We are going to the splash park on the beach, with dear friends to watch the sunrise, play, and eat.  We are hoping to get there, have fun and snack, before the rush comes later in the day.  Perhaps, we will see fireworks on the Inter Coastal Waterway at night.  Whatever your plans, I hope you have a wonderful day celebrating with family and dear friends, making memories that last a lifetime.
