Garlic Onion Mushroom Chuck Roast
Great combinations of flavors and one of my favorite ways to cook a roast. I use fresh vegetables whenever possible. However, I was out of celery and mushrooms, and didn't get to go to the store, dried celery and canned mushrooms worked well.

Thursday's Treasures Week 87
Sitting in a hospital room with one of my 6 year old twins, has me thinking of long, hot days, laughter, homemade ice cream, the feel of sand between toes, watermelon, picnics, water, popsicles, bar-b-ques, bonfires and memories to be made, all.....just around the corner.

Italian Pepperoni Pasta
One of my twins loves pasta! He could eat it all day , each and every day. Now that I think about it, I think he does have it at once a day. This is perfect for the summer as it doesn’t need to be refrigerated. I’ll be making this one a lot.

Garlic Italian Peperoncini Pork
This is our absolute favorite way to cook pork. I’ve cooked this in the crock pot, and it is great that way, but Love it cooked in the oven, even more. Pork butt and country ribs are fantastic cooked this way! We buy pork on sale, or a bigger piece, and have it cut so we can eat now and save for later. This is perfect for pulled pork or as a meat for your meal.

Less than 3 weeks and ah, sweet Summertime will be upon us! I am just as excited as the boys! Do so staycations...going to local places multiple times instead of going to one place for several days. In Florida, there is always something to do close to home. ;)
Thank you for all the amazing links shared again last week! I love them all and wish I could feature each of them. Instead, I will share the link to last week's Thursday's Treasures and some of the wonderful links shared.

Homemade Magic Shell
I got an ice cream maker! Woo Hoo!!!! Finally! I made Vanilla Ice Cream for my first one...the boys LOVED it ... we all did! Do you like toppings on your ice cream? I'm picky about it and it all depends what type of dessert mood I'm in. Some days are berries while others are nuts and chocolate. Today, was chocolate so I decided to make Magic Shell. It's easy and everyone loved it. In less than one minute you can make magical chocolate shells and amaze your little ones, too.

Vanilla Ice Cream..Yes, I got an Ice Cream Maker
My sweet boys, and their thoughtful Daddy, got me an ice cream maker for Mother’s Day! Finally, after all these years of making ice cream in the freezer, I got the ice cream maker I have dreamed of. It’s nothing fancy. It makes ice cream the “old fashion way” as my twins like to say. If it isn’t connected with a computer, that’s the category everything falls into. It’s one that you have to look all over town to find the rock salt because the place it was bought, doesn’t carry it. I love it and picture great times, sitting outside with my boys, waiting for the sweet outcome of the humming machine. I had to go to Publix to find rock salt and bought 3 boxes just so I’ll have it should there be a shortage this summer. It could happen, ya know. I would have to get the kosher salt out and try, if it did.

Biscuit Cakes
Biscuits and syrup. Do you remember that? Do you still eat it? I think I ate it every time my precious Mama made her fabulous homemade biscuits. It was soooo good. I would eat just the biscuits, all broken up, covered with syrup. I know, but when something is that good ... you just can't help yourself! Bake yourself some biscuit cakes and eat them instead of pancakes. You will love them!

Chicken Enchiladas
Happy Cinco de Mayo! My oldest son loves Mexican food. Heck, most of us here do. This was my first attempt at making Chicken Enchiladas and they must have turned out okay...there wasn't any left. Hubby bought enchilada sauce, I opened it and threw it away. YUCK! I don't know what it was but that had me set on making my own. We all loved these, so maybe, the homemade sauce wasn't so bad.

Sweet Potato Puffs
Oh, do I have a favorite holiday sweet potato dish for you! Dessert or side, you decide. It's an old one but a great one! Cook as many sweet potatoes as you wish. Sweeten to your taste with either brown or regular sugar. Add vanilla, cinnamon, nutmeg, ginger, nuts....whatever you want to make it your own. There really isn't a set amount of anything. It's your old sweet potato casserole rolled up in a ball with the marshmallows hiding inside!!!
